A quick and delicious Beef and Bell Pepper Stir-Fry that combines tender ground beef with vibrant bell peppers, creating a colorful and appetizing meal.
Ingredients
- Ground beef: 1 lb (450 g)
- Bell peppers: 2 medium, sliced
- Onion: 1 medium, sliced
- Garlic: 3 cloves, minced
- Soy sauce: 1/4 cup (60 ml)
- Rice: 1 cup (uncooked)
- Black beans: 1 can (15 oz or 425 g), drained and rinsed
- Cumin: 1 teaspoon (5 g)
- Fresh cilantro: 1/4 cup, chopped
- Olive oil: 2 tablespoons
- Salt and pepper: to taste
Instructions
- Prepare the ground beef by placing it in a bowl and optionally marinating it with soy sauce and cumin for about 10 minutes.
- Wash and slice the bell peppers and onion into thin strips, and mince the garlic.
- If marinating, combine the ground beef with soy sauce and cumin, mixing well.
- Heat a large skillet or wok over medium-high heat, add olive oil, and cook the marinated ground beef for 5-7 minutes until browned.
- Push the beef to one side of the skillet and add the sliced onions and bell peppers, sautéing for 5-7 minutes until tender. Add minced garlic and cook for an additional minute.
- Stir in black beans, soy sauce, cumin, salt, and pepper, mixing well and cooking for another 2-3 minutes.
- Serve the stir-fry over fluffed rice and garnish with chopped cilantro.
Notes
- Feel free to add additional vegetables like zucchini, corn, or snap peas.
- For a spicy kick, consider adding red pepper flakes or hot sauce.
