Description
A selection of cold side dishes perfect for Thanksgiving.
Ingredients
Scale
- 2 cups of cooked quinoa
- 1 cup of diced cucumbers
- 1 cup of cherry tomatoes, halved
- 1/2 cup of red onion, finely chopped
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the quinoa, cucumbers, tomatoes, onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve cold as a refreshing side dish.

- This dish can be made a day in advance.
- Feel free to add other vegetables or herbs you like.
