Description

A refreshing cold noodle salad with a sesame dressing.


Ingredients

  • 8 oz soba noodles
  • 1/4 cup sesame oil
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 2 cups shredded cabbage
  • 1 cup julienned carrots
  • 1/4 cup chopped green onions
  • 1/4 cup sesame seeds
  • 1/4 cup chopped cilantro

Instructions

  1. Cook soba noodles according to package instructions.
  2. Drain and rinse under cold water.
  3. In a bowl, mix sesame oil, soy sauce, rice vinegar, and honey.
  4. Add noodles to the dressing and toss to coat.
  5. Add cabbage, carrots, green onions, sesame seeds, and cilantro.
  6. Toss everything together until well mixed.
  7. Chill in the refrigerator for 30 minutes before serving.

Notes

  • Adjust sweetness by adding more or less honey.
  • Feel free to add protein like chicken or tofu.
  • This salad can be made a day in advance.
