Description
A refreshing cold noodle salad with a sesame dressing.
Ingredients

- 8 oz soba noodles
- 1/4 cup sesame oil
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey
- 2 cups shredded cabbage
- 1 cup julienned carrots
- 1/4 cup chopped green onions
- 1/4 cup sesame seeds
- 1/4 cup chopped cilantro
Instructions
- Cook soba noodles according to package instructions.
- Drain and rinse under cold water.
- In a bowl, mix sesame oil, soy sauce, rice vinegar, and honey.
- Add noodles to the dressing and toss to coat.
- Add cabbage, carrots, green onions, sesame seeds, and cilantro.
- Toss everything together until well mixed.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- Adjust sweetness by adding more or less honey.
- Feel free to add protein like chicken or tofu.
- This salad can be made a day in advance.
