A refreshing cold rotini pasta salad perfect for summer gatherings.


Ingredients

  • 2 cups rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup bell pepper, diced
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook rotini pasta according to package instructions. Drain and cool.
  2. In a large bowl, combine pasta, tomatoes, cucumber, onion, bell pepper, olives, and feta.
  3. In a separate bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour dressing over pasta salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
