Description
A refreshing cold pasta salad with pesto.
Ingredients

- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup fresh basil leaves
- 1/2 cup pesto sauce
- 1/4 cup grated Parmesan cheese
- 1/4 cup pine nuts
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions.
- Drain and rinse the pasta under cold water.
- In a large bowl, combine the pasta, cherry tomatoes, basil leaves, pesto sauce, Parmesan cheese, and pine nuts.
- Toss everything together until well mixed.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Use whole wheat pasta for a healthier option.
- Add grilled chicken for extra protein.
- This salad can be stored in the fridge for up to 3 days.
