A delicious blend of coffee cake and banana bread in muffin form.
Ingredients

- 2 ripe bananas, mashed
- 1 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 teaspoon vanilla extract
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sour cream
- 1/2 cup chopped walnuts
- 1/2 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix mashed bananas, sugar, and butter.
- Add eggs and vanilla extract, mixing well.
- In another bowl, combine flour, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to the banana mixture.
- Stir in sour cream and walnuts until just combined.
- Pour the batter into muffin tins lined with paper liners.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the muffins cool before serving.
Notes
- Store leftovers in an airtight container.
- These muffins freeze well.
- Use ripe bananas for better flavor.
