Delicious coconut stuffed French toast for breakfast.
Ingredients

- 4 slices of bread
- 1 cup coconut cream
- 1/2 cup shredded coconut
- 2 eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- Butter for cooking
- Maple syrup for serving
Instructions
- In a bowl, mix coconut cream and shredded coconut.
- Spread the coconut mixture on two slices of bread, then top with the remaining slices to form sandwiches.
- In another bowl, whisk eggs, milk, and vanilla extract.
- Dip each sandwich in the egg mixture, coating both sides.
- Heat a skillet over medium heat and add butter.
- Cook the sandwiches until golden brown on both sides.
- Serve with maple syrup.
Notes
- Use thick bread for best results.
- Adjust sweetness by adding sugar to the egg mixture if desired.
