- 1 cup ricotta cheese
- 1 cup coconut milk
- 1 cup all-purpose flour
- 3/4 cup sugar
- 1/2 cup unsweetened shredded coconut
- 3 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan.
- In a mixing bowl, combine ricotta cheese and coconut milk.
- Add sugar, eggs, and vanilla extract; mix until smooth.
- In another bowl, whisk together flour, baking powder, shredded coconut, and salt.
- Gradually add dry ingredients to the wet mixture; stir until just combined.
- Pour the batter into the prepared cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let the cake cool before serving.
Notes
- Store leftovers in an airtight container.
- Can be served with whipped cream or fresh fruit.
