Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan.
  3. In a mixing bowl, combine ricotta cheese and coconut milk.
  4. Add sugar, eggs, and vanilla extract; mix until smooth.
  5. In another bowl, whisk together flour, baking powder, shredded coconut, and salt.
  6. Gradually add dry ingredients to the wet mixture; stir until just combined.
  7. Pour the batter into the prepared cake pan.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
