Ingredients

- 1 cup vegetable broth
- 1 cup mushrooms, sliced
- 1 cup bell peppers, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated

- 1 teaspoon lime juice
- Salt and pepper to taste
Instructions
- Heat a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in mushrooms and bell peppers, cook for 5 minutes.
- Add coconut milk and vegetable broth, bring to a simmer.
- Stir in ginger, soy sauce, and lime juice.
- Season with salt and pepper.
- Simmer for 10-15 minutes.
- Serve hot.
