Ingredients

- 500g white fish fillets
- 400ml coconut milk
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 stalk lemongrass, chopped
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 red chili, sliced
- Fresh cilantro for garnish
Instructions
- Heat a pan over medium heat.
- Add ginger, garlic, and lemongrass. Sauté until fragrant.
- Add curry powder and stir for 1 minute.
- Pour in coconut milk and bring to a simmer.
- Add fish sauce, lime juice, and chili.
- Gently add fish fillets and cook for 8-10 minutes until fish is cooked through.
- Garnish with fresh cilantro and serve hot.
Notes
- Adjust the spice level by adding more chili.
- Serve with rice or noodles.
- You can use any firm white fish.
