Ingredients

  • 400ml coconut milk
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 stalk lemongrass, chopped
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 red chili, sliced
  • Fresh cilantro for garnish

Instructions

  1. Heat a pan over medium heat.
  2. Add ginger, garlic, and lemongrass. Sauté until fragrant.
  3. Add curry powder and stir for 1 minute.
  4. Pour in coconut milk and bring to a simmer.
  5. Add fish sauce, lime juice, and chili.
  6. Gently add fish fillets and cook for 8-10 minutes until fish is cooked through.
  7. Garnish with fresh cilantro and serve hot.
