- 1 ½ cups coconut milk
- 1 cup whole milk
- ¾ cup sugar
- 3 large eggs
- ¼ cup cornstarch
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- 1 pie crust
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine coconut milk, whole milk, and sugar. Heat until warm.
- In a bowl, whisk eggs and cornstarch until smooth.
- Slowly add warm milk mixture to the egg mixture while whisking.
- Stir in vanilla extract and shredded coconut.
- Pour the filling into the pre-baked pie crust.
- Bake for 40-45 minutes until set.
- Cool before serving.

- Top with whipped cream if desired.
