Ingredients

  • 4 cups vegetable broth
  • 2 tablespoons curry paste
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 1 cup carrots, sliced
  • 1 cup bell peppers, chopped
  • 1 cup green beans, trimmed
  • 1 cup flour for dumplings
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup water

Instructions

  1. Heat a pot over medium heat. Add onion, garlic, and ginger. Sauté until soft.
  2. Add curry paste and stir for 1 minute.
  3. Pour in coconut milk and vegetable broth. Bring to a simmer.
  4. Add carrots, bell peppers, and green beans. Cook for 10 minutes.
  5. In a bowl, mix flour, baking powder, and salt. Add water and stir until combined.
  6. Drop spoonfuls of dumpling mixture into the simmering soup.
  7. Cover and let cook for 10 minutes until dumplings are fluffy.
  8. Serve hot and enjoy.

Notes

  • Adjust spice level by adding more curry paste.
  • You can add any vegetables you like.
