Description
A delicious coconut curry soup with soft dumplings.
Ingredients

- 1 can coconut milk
- 4 cups vegetable broth
- 2 tablespoons curry paste
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 1 cup carrots, sliced
- 1 cup bell peppers, chopped
- 1 cup green beans, trimmed
- 1 cup flour for dumplings
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup water
Instructions
- Heat a pot over medium heat. Add onion, garlic, and ginger. Sauté until soft.
- Add curry paste and stir for 1 minute.
- Pour in coconut milk and vegetable broth. Bring to a simmer.
- Add carrots, bell peppers, and green beans. Cook for 10 minutes.
- In a bowl, mix flour, baking powder, and salt. Add water and stir until combined.
- Drop spoonfuls of dumpling mixture into the simmering soup.
- Cover and let cook for 10 minutes until dumplings are fluffy.
- Serve hot and enjoy.
Notes
- Adjust spice level by adding more curry paste.
- You can add any vegetables you like.
- This soup can be made ahead and reheated.
