Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and garlic; sauté until soft.
- Stir in curry powder and cook for 1 minute.
- Add pumpkin puree and vegetable broth; bring to a simmer.
- Stir in coconut milk; cook for another 10 minutes.
- Blend the soup until smooth.
- Season with salt and pepper to taste.
- Serve hot.
