A flavorful dish of chicken cooked in coconut curry served with rice noodles.
Ingredients

- 1 lb chicken breast, cut into strips
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- 1 tbsp vegetable oil
- 2 cups chicken broth
- 1 cup rice noodles
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- Salt and pepper to taste
Instructions
- Heat oil in a pan over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Add chicken strips and cook until browned.
- Stir in curry powder and cook for 2 minutes.
- Pour in chicken broth and coconut milk.
- Add bell pepper and broccoli, simmer for 10 minutes.
- Cook rice noodles according to package instructions.
- Serve curry over rice noodles.

- Adjust spice level by adding chili flakes.
