- 2 cups jasmine rice
- 1 can (14 oz) coconut milk
- 1 lb chicken breast, diced
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- Salt and pepper to taste
Instructions
- Rinse the jasmine rice under cold water.
- In a pot, combine rice, coconut milk, and 1 cup of water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until rice is tender.
- In a skillet, heat olive oil over medium heat. Add garlic and ginger, sauté for 1 minute.
- Add diced chicken, soy sauce, salt, and pepper. Cook until chicken is browned and cooked through.
- Add broccoli and bell pepper to the skillet. Cook for an additional 5 minutes until vegetables are tender.
- Serve chicken and vegetables over coconut rice.
Notes
- Garnish with cilantro for extra flavor.
- Adjust the spice level by adding chili flakes if desired.
