Ingredients

  • 2 cups jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 lb chicken breast, cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, grated
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • Salt and pepper to taste

Instructions

  1. Rinse the jasmine rice until the water runs clear.
  2. In a pot, combine rice, coconut milk, and 1 cup of water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.
  4. In a skillet, heat oil over medium heat. Add chicken, garlic powder, ginger, salt, and pepper. Cook until chicken is browned.
  5. Add broccoli and bell pepper to the skillet. Stir and cook for an additional 5 minutes.
  6. Stir in soy sauce and lime juice. Cook for another 2 minutes.
  7. Serve chicken mixture over coconut rice.
