A delicious coconut chicken rice bowl that combines tender chicken, fragrant coconut rice, and fresh vegetables.

- 2 cups jasmine rice
- 1 can (13.5 oz) coconut milk
- 1 lb chicken breast, cubed
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- 1 teaspoon ginger, grated
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- Salt and pepper to taste
Instructions
- Rinse the jasmine rice until the water runs clear.
- In a pot, combine rice, coconut milk, and 1 cup of water. Bring to a boil.
- Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.
- In a skillet, heat oil over medium heat. Add chicken, garlic powder, ginger, salt, and pepper. Cook until chicken is browned.
- Add broccoli and bell pepper to the skillet. Stir and cook for an additional 5 minutes.
- Stir in soy sauce and lime juice. Cook for another 2 minutes.
- Serve chicken mixture over coconut rice.

- Adjust the amount of vegetables based on your preference.
- You can add more lime juice for extra flavor.
- Use brown rice for a healthier option.
