Ingredients

  • 1 cup coconut milk
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup shredded coconut
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar for frosting
  • 2 tablespoons milk for frosting
  • 1/2 cup shredded coconut for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cake mix, coconut milk, vegetable oil, and eggs.
  3. Mix well until smooth.
  4. Fold in the shredded coconut and vanilla extract.
  5. Pour the batter into a greased cake pan.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let the cake cool completely.
  8. In a small bowl, mix powdered sugar and milk to make the frosting.
  9. Spread the frosting on the cooled cake.
  10. Top with additional shredded coconut.
