A simple and delicious coconut cake made using cake mix.
Ingredients

- 1 box of white cake mix
- 1 cup coconut milk
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup shredded coconut
- 1 teaspoon vanilla extract
- 1 cup powdered sugar for frosting
- 2 tablespoons milk for frosting
- 1/2 cup shredded coconut for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the cake mix, coconut milk, vegetable oil, and eggs.
- Mix well until smooth.
- Fold in the shredded coconut and vanilla extract.
- Pour the batter into a greased cake pan.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cake cool completely.
- In a small bowl, mix powdered sugar and milk to make the frosting.
- Spread the frosting on the cooled cake.
- Top with additional shredded coconut.

- Use sweetened or unsweetened coconut based on your preference.
- Store leftovers in an airtight container.
