Ingredients

- 1 cup Arborio rice
- 4 cups milk
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 eggs
Instructions
- In a saucepan, combine rice, milk, sugar, salt, and cinnamon.
- Bring to a boil over medium heat, then reduce to a simmer.
- Cook for 20-25 minutes, stirring frequently until rice is tender.
- In a bowl, whisk eggs and vanilla extract.
- Slowly add a cup of the hot rice mixture to the egg mixture while whisking.
- Pour the egg mixture back into the saucepan and cook for another 5 minutes.
- Remove from heat and let it cool slightly before serving.
Notes
- Serve warm or chilled.
- Top with additional cinnamon or raisins if desired.
