Description
Classic Baked Chicken with Potatoes is a comforting dish that brings families together, featuring tender chicken and crispy potatoes, perfect for busy weeknights or special gatherings.
Ingredients
- Chicken thighs: 4 pieces (bone-in, skin-on)
- Baby potatoes: 500 grams (about 1 pound)
- Olive oil: 3 tablespoons
- Garlic: 4 cloves (minced)
- Fresh rosemary: 2 tablespoons (chopped, or 1 tablespoon dried)
- Salt: 1 teaspoon (or to taste)
- Pepper: 1/2 teaspoon (or to taste)
Instructions
- Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
- Wash the baby potatoes thoroughly and cut them in half.
- In a large bowl, combine olive oil, minced garlic, chopped rosemary, salt, and pepper. Add the halved potatoes and toss to coat.
- In a large baking dish, place the seasoned chicken thighs skin-side up and surround them with the coated baby potatoes.
- Bake in a preheated oven at 200°C (400°F) for about 40-45 minutes until the chicken reaches an internal temperature of 75°C (165°F) and the skin is golden brown.
- Let the dish rest for about 5 minutes before serving, garnishing with additional fresh rosemary if desired.
Notes
- Ensure the chicken is dried properly for crispy skin.
- Avoid overcrowding the pan to prevent steaming.
- Check the internal temperature for doneness.
- Allow the chicken to rest after baking for juicier meat.
