Ingredients

  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar.
  3. Add eggs and mix well.
  4. Stir in milk and vanilla extract.
  5. In another bowl, combine flour, baking powder, salt, and cinnamon.
  6. Gradually mix dry ingredients into the wet ingredients until just combined.
  7. In a small bowl, mix brown sugar and cinnamon for the swirl.
  8. Fill muffin cups halfway with batter, sprinkle with cinnamon sugar, and cover with more batter.
  9. Swirl a toothpick through each muffin.
  10. Bake for 20-25 minutes or until a toothpick comes out clean.
