Ingredients
- All-purpose flour: 4 cups (500 g)
- Active dry yeast: 2 1/4 teaspoons (1 packet)
- Granulated sugar: 1/4 cup (50 g) plus 1/2 cup (100 g) for cinnamon sugar
- Salt: 1 teaspoon
- Warm water: 1 1/2 cups (350 ml) (about 110°F or 43°C)
- Baking soda: 1/2 cup (120 ml)
- Ground cinnamon: 1 tablespoon
- Unsalted butter: 1/4 cup (60 g), melted
Instructions
- Prepare the dough by combining warm water, active dry yeast, and 1/4 cup of granulated sugar. Let it sit for 5-10 minutes until frothy.
- In a separate bowl, whisk together all-purpose flour and salt. Gradually add the flour mixture to the yeast mixture and stir until a dough forms.
- Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour.
- After rising, punch down the dough, divide into 8 pieces, and shape each into a pretzel.
- Boil 4 cups of water with baking soda. Boil pretzels for 30 seconds each, then place on baking sheets.
- Preheat oven to 425°F (220°C). Brush pretzels with melted butter and bake for 12-15 minutes until golden brown.
- Mix remaining sugar and cinnamon. Sprinkle over warm pretzels after baking.
- Let cool slightly on a wire rack before serving.
