Description

Ingredients

  • 2 cups grated zucchini
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup brown sugar (for streusel)
  • 1/4 cup all-purpose flour (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • 2 tablespoons butter, melted (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan.
  3. In a large bowl, mix zucchini, sugar, oil, eggs, and vanilla.
  4. In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. If using, fold in walnuts.
  7. In a small bowl, mix brown sugar, flour, cinnamon, and melted butter to create the streusel.
  8. Pour half of the batter into the loaf pan, sprinkle half of the streusel, then add the remaining batter.
  9. Top with the rest of the streusel.
  10. Bake for 60-70 minutes or until a toothpick comes out clean.
  11. Let it cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

  • Store in an airtight container at room temperature.
  • This bread can be frozen for up to 3 months.
  • Substitute coconut oil for a different flavor.
