A moist and flavorful zucchini bread topped with a cinnamon streusel.
Ingredients

- 2 cups grated zucchini
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- 1/4 cup brown sugar (for streusel)
- 1/4 cup all-purpose flour (for streusel)
- 1 teaspoon ground cinnamon (for streusel)
- 2 tablespoons butter, melted (for streusel)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5 inch loaf pan.
- In a large bowl, mix zucchini, sugar, oil, eggs, and vanilla.
- In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- If using, fold in walnuts.
- In a small bowl, mix brown sugar, flour, cinnamon, and melted butter to create the streusel.
- Pour half of the batter into the loaf pan, sprinkle half of the streusel, then add the remaining batter.
- Top with the rest of the streusel.
- Bake for 60-70 minutes or until a toothpick comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
- Store in an airtight container at room temperature.
- This bread can be frozen for up to 3 months.
- Substitute coconut oil for a different flavor.
