Delicious cinnamon roll muffins that combine the flavors of cinnamon rolls and muffins.
Ingredients

- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup brown sugar
- 1 tablespoon ground cinnamon
- 1/2 cup icing sugar
- 1–2 tablespoons milk (for icing)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, combine milk, oil, egg, and vanilla.
- Add the wet ingredients to the dry ingredients and mix until combined.
- In a small bowl, mix brown sugar and cinnamon for the filling.
- Fill muffin cups halfway with batter, sprinkle with cinnamon sugar, and top with remaining batter.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Mix icing sugar and milk for the glaze and drizzle over muffins.
Notes
- Use paper liners for easy removal.
- Store in an airtight container.
- Best served warm.
