Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup powdered sugar (for icing)
  • 2 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, baking powder, and salt.
  3. In another bowl, combine milk, melted butter, eggs, and vanilla.
  4. Pour wet ingredients into dry ingredients and mix until just combined.
  5. In a separate bowl, combine brown sugar and cinnamon.
  6. Fill muffin cups halfway with batter, sprinkle cinnamon mixture, then top with remaining batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool and mix powdered sugar with milk for icing.
  9. Drizzle icing over cooled muffins.
