Description

Cinnamon roll cookies are soft, chewy cookies that mimic the flavors of traditional cinnamon rolls.


Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/2 cup powdered sugar (for icing)
  • 1 tablespoon milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, and salt.
  3. In another bowl, cream together butter, granulated sugar, and brown sugar.
  4. Add the egg and vanilla to the butter mixture, and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, and mix until combined.
  6. Stir in ground cinnamon.
  7. Drop spoonfuls of dough onto a baking sheet.
  8. Bake for 10-12 minutes or until edges are golden.
  9. Let cool before icing.
  10. Mix powdered sugar and milk to make icing, then drizzle over cookies.

Notes

  • Store cookies in an airtight container.
  • For a stronger cinnamon flavor, add more cinnamon to the dough.
