Description

The Christmas Yule Log, or ‘Bûche de Noël,’ is a festive dessert shaped like a log, made from a light chocolate sponge cake filled with rich chocolate ganache, often dusted with powdered sugar to resemble snow.


Ingredients

  • 4 large eggs
  • 100 g granulated sugar
  • 100 g all-purpose flour
  • 30 g unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 50 g unsalted butter, melted
  • 200 g dark chocolate, chopped
  • 200 ml heavy cream
  • Powdered sugar (for dusting)
  • Fresh berries (1 cup)
  • Meringue mushrooms

Instructions

  1. Preheat the oven to 180°C (350°F) and line a 10×15 inch (25×38 cm) jelly roll pan with parchment paper.
  2. In a large bowl, beat 4 eggs and 100 g sugar until thick and pale, about 5-7 minutes.
  3. Sift together 100 g flour, 30 g cocoa powder, 1/4 teaspoon baking powder, and 1/4 teaspoon salt in another bowl.
  4. Gently fold the dry ingredients into the egg mixture, then fold in 50 g melted butter.
  5. Pour the batter into the prepared pan and bake for 12-15 minutes until it springs back when touched.
  6. Let the cake cool for a few minutes, then invert it onto a powdered sugar-dusted towel and roll it up with the towel inside.
  7. For the ganache, heat 200 ml cream until simmering, pour over 200 g chopped chocolate, and stir until smooth.
  8. Once the cake is cool, unroll it, spread ganache on the surface, and roll it back up seam-side down.
  9. Cover the log with remaining ganache, dust with powdered sugar, and decorate with berries and meringue mushrooms.

Notes

  • Ensure eggs and sugar are whipped long enough for a light sponge.
  • Gently fold the batter to avoid deflating it.
  • Roll the cake while still warm to prevent cracking.
  • Do not let the cream boil when making ganache.
