Description

Ingredients

Scale
  • 500g bread flour
  • 350ml water
  • 100g sourdough starter
  • 10g salt
  • 100g dried cranberries
  • 50g chopped walnuts
  • 1 tsp ground cinnamon
  • 1 tsp nutmeg
  • 1 tbsp honey

Instructions

  1. Mix flour, water, and sourdough starter in a bowl.
  2. Add salt, cranberries, walnuts, cinnamon, nutmeg, and honey.
  3. Knead the dough for 10 minutes.
  4. Let the dough rise for 4 hours, folding it every hour.
  5. Shape the dough and place it in a proofing basket.
  6. Let it proof for another 2 hours.
  7. Preheat the oven to 230°C (450°F).
  8. Score the top of the dough and bake for 30 minutes.
  9. Cool on a wire rack before slicing.

  • Use a kitchen scale for accurate measurement.
  • Store leftover bread in a paper bag.
