Ingredients

- 2 cups of Brussels sprouts, halved
- 1 cup of green beans, trimmed
- 1 cup of carrots, sliced
- 1/2 cup of pecans, chopped
- 1/4 cup of dried cranberries
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine Brussels sprouts, green beans, and carrots.
- Add olive oil, salt, and pepper. Toss to coat.
- Spread the vegetables on a baking sheet.
- Roast for 20-25 minutes until tender.
- Remove from oven and mix in pecans and cranberries.
- Serve warm.

- Feel free to add other vegetables like sweet potatoes or cauliflower.
