Instructions
- Preheat your oven to 400°F (200°C).
- Wash and trim the Brussels sprouts, cutting them in half.
- Peel and dice the carrots.
- In a large bowl, combine Brussels sprouts and carrots.
- Add olive oil, salt, and pepper. Toss to coat.
- Spread the mixture on a baking sheet.
- Bake for 25-30 minutes until tender and caramelized.
- Sprinkle with Parmesan cheese before serving.
Notes
- Feel free to add other vegetables like sweet potatoes or green beans.
