- 2 cups Brussels sprouts, halved
- 1 cup carrots, sliced
- 1 cup green beans, trimmed
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 tablespoon balsamic vinegar
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine Brussels sprouts, carrots, and green beans.
- Drizzle with olive oil and sprinkle with salt, pepper, and garlic powder. Toss to coat.
- Spread the vegetables on a baking sheet.
- Roast in the oven for 25-30 minutes until tender and slightly caramelized.
- Drizzle with balsamic vinegar before serving.
Notes
- Try adding nuts for extra crunch.
