A traditional Christmas pudding recipe that is rich and flavorful.
Ingredients

- 200g mixed dried fruit
- 100g raisins
- 100g currants
- 50g chopped nuts
- 100g brown sugar
- 200ml stout or dark beer
- 100g breadcrumbs
- 100g flour
- 2 tsp mixed spice
- 1 tsp baking powder
- 2 eggs
- 50ml milk
- Butter for greasing
Instructions
- Preheat your oven to 160°C (320°F).
- Grease a pudding basin with butter.
- Mix the dried fruit, nuts, and sugar in a bowl.
- Add the stout and let it soak for 30 minutes.
- In another bowl, combine the breadcrumbs, flour, mixed spice, and baking powder.
- Beat the eggs and milk together, then add to the fruit mixture.
- Combine both mixtures until well mixed.
- Pour the mixture into the greased pudding basin and cover with parchment paper.
- Place the basin in a larger pot with boiling water, ensuring water reaches halfway up the basin.
- Steam for 2 hours, checking water levels occasionally.
- Remove from heat and let cool.
- Serve warm with custard or cream.
Notes
- Can be made a few weeks in advance for better flavor.
- Store in a cool, dry place.
- Reheat by steaming before serving.
