Description

Ingredients

  • 200g mixed dried fruit
  • 100g raisins
  • 100g currants
  • 50g chopped nuts
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 250ml stout or dark beer
  • 200g breadcrumbs
  • 100g brown sugar
  • 2 eggs
  • 50g melted butter
  • 1 apple, grated

Instructions

  1. Mix all dried fruits and nuts in a bowl.
  2. Stir in spices and stout. Let it soak for a few hours.
  3. In another bowl, mix breadcrumbs, sugar, eggs, butter, and grated apple.
  4. Combine the soaked fruit mixture with the breadcrumb mixture.
  5. Pour the mixture into a greased pudding basin.
  6. Cover with a cloth and secure it.
  7. Steam for 6 hours, adding water as needed.
  8. Let it cool, then store until serving.

Notes

  • Best made a few weeks in advance.
  • Can be reheated in steam or microwave.
