Description
Traditional Christmas pudding made with dried fruits and spices.
Ingredients
Scale
- 200g mixed dried fruits
- 100g currants
- 100g sultanas
- 50g chopped nuts
- 50g breadcrumbs
- 100g brown sugar
- 2 eggs
- 150ml stout or dark beer
- 1 tsp mixed spice
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
Instructions
- Preheat the oven to 160°C (320°F).
- Mix all dry ingredients in a bowl.
- Add eggs and stout, mix until combined.
- Pour the mixture into a greased pudding basin.
- Cover with parchment paper and foil.
- Steam for 2-3 hours.
- Let it cool, then store in a cool place until serving.
- Reheat before serving and serve with brandy sauce.
Notes
- Make it a few weeks in advance for better flavor.
- Can be frozen for up to 3 months.
