Description

Traditional Christmas pudding made with dried fruits and spices.


Ingredients

  • 200g mixed dried fruits
  • 100g currants
  • 100g sultanas
  • 50g chopped nuts
  • 50g breadcrumbs
  • 100g brown sugar
  • 2 eggs
  • 150ml stout or dark beer
  • 1 tsp mixed spice
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. Mix all dry ingredients in a bowl.
  3. Add eggs and stout, mix until combined.
  4. Pour the mixture into a greased pudding basin.
  5. Cover with parchment paper and foil.
  6. Steam for 2-3 hours.
  7. Let it cool, then store in a cool place until serving.
  8. Reheat before serving and serve with brandy sauce.
