  4. Gradually add sugar, one tablespoon at a time, while beating until stiff peaks form.
  5. Mix in vanilla and peppermint extracts.
  6. Fold in crushed candy canes gently.
  7. Drop spoonfuls of meringue onto a baking sheet lined with parchment paper.
  8. Bake for 1 hour or until dry and crisp.
  9. Turn off the oven and let cookies cool inside for another hour.
