Ingredients

  • 2 racks of lamb (about 2 lbs each)
  • 1 beef tenderloin (45 lbs)
  • 3 cups of chicken broth
  • 1 cup of red wine
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Fresh herbs (rosemary, thyme, sage)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Prepare the turkey by seasoning it inside and out with salt, pepper, and herbs.
  3. Place the turkey in a roasting pan and add chicken broth.
  4. Roast the turkey for about 3 hours, basting occasionally.
  5. While the turkey cooks, prepare the ham by glazing it with red wine and herbs.
  6. Cook the ham for about 1.5 hours.
  7. Season the lamb racks with salt, pepper, and herbs, and roast for about 25 minutes.
  8. For the beef tenderloin, season and sear in olive oil, then roast for 20-25 minutes.
  9. Let all meats rest before serving.
  10. Slice and serve with sides of your choice.
