Ingredients

  • almond flour – 1 cup
  • powdered sugar – 1 cup
  • egg whites – 3 large
  • granulated sugar – 1/4 cup
  • vanilla extract – 1 tsp
  • food coloring – red and green
  • butter – 1/2 cup
  • heavy cream – 1/4 cup
  • peppermint extract – 1/2 tsp

Instructions

  1. Preheat oven to 300°F (150°C).
  2. In a bowl, sift almond flour and powdered sugar together.
  3. In another bowl, beat egg whites until foamy.
  4. Add granulated sugar gradually and beat until stiff peaks form.
  5. Fold in the almond mixture gently.
  6. Divide the batter and add food coloring to each portion.
  7. Pipe the batter onto a baking sheet lined with parchment paper.
  8. Let them rest for 30 minutes until a skin forms.
  9. Bake for 15-20 minutes.
  10. Let cool completely before filling.
  11. For the filling, beat butter until creamy, then add heavy cream and peppermint extract.
  12. Sandwich the macarons with the filling.
