Delicious and festive Christmas macarons with a creamy filling.
Ingredients
- almond flour – 1 cup
- powdered sugar – 1 cup
- egg whites – 3 large
- granulated sugar – 1/4 cup
- vanilla extract – 1 tsp
- food coloring – red and green
- butter – 1/2 cup
- heavy cream – 1/4 cup
- peppermint extract – 1/2 tsp
Instructions
- Preheat oven to 300°F (150°C).
- In a bowl, sift almond flour and powdered sugar together.
- In another bowl, beat egg whites until foamy.
- Add granulated sugar gradually and beat until stiff peaks form.
- Fold in the almond mixture gently.
- Divide the batter and add food coloring to each portion.
- Pipe the batter onto a baking sheet lined with parchment paper.
- Let them rest for 30 minutes until a skin forms.
- Bake for 15-20 minutes.
- Let cool completely before filling.
- For the filling, beat butter until creamy, then add heavy cream and peppermint extract.
- Sandwich the macarons with the filling.
