Ingredients

  • 1 whole goose (1012 lbs)
  • 2 apples, quartered
  • 1 onion, quartered
  • 4 cups of water
  • Salt and pepper to taste
  • 1 tablespoon of thyme
  • 1 tablespoon of rosemary

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Clean the goose and pat it dry.
  3. Season the inside of the goose with salt, pepper, thyme, and rosemary.
  4. Stuff the cavity with apples and onion.
  5. Place the goose on a roasting rack in a large roasting pan.
  6. Pour water into the pan.
  7. Roast for about 2 hours, basting every 30 minutes.
  8. Increase the temperature to 400°F (200°C) for the last 30 minutes to crisp the skin.
  9. Let the goose rest for 15 minutes before carving.
