Description
A traditional Christmas fruit cake filled with dried fruits and nuts.
Ingredients

- 2 cups mixed dried fruits
- 1 cup walnuts, chopped
- 1 cup raisins
- 1 cup currants
- 1 cup flour
- 1/2 cup butter, softened
- 1 cup sugar
- 4 eggs
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 cup rum or brandy
Instructions
- Preheat your oven to 325°F (165°C).
- In a bowl, mix dried fruits and nuts with a little flour.
- In another bowl, cream together butter and sugar.
- Add eggs one at a time, beating well after each addition.
- Stir in the remaining flour, baking powder, cinnamon, and nutmeg.
- Add the fruit and nut mixture and rum or brandy. Mix well.
- Pour the batter into a greased cake pan.
- Bake for 1.5 hours or until a toothpick comes out clean.
- Let it cool before removing from the pan.
Notes
- Store in an airtight container for better flavor.
- Can be made weeks in advance for enhanced taste.
- Keep refrigerated if using alcohol.
