A festive layered dessert perfect for Christmas celebrations.
Ingredients

- 2 cups of almond flour
- 1 cup of granulated sugar
- 4 large eggs
- 1/2 cup of unsweetened cocoa powder
- 1 cup of heavy cream
- 1/2 cup of dark chocolate, chopped
- 1 cup of raspberry puree
- 1 tablespoon of gelatin
- 1/4 cup of water
- Fresh raspberries for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix almond flour, sugar, and cocoa powder.
- Add eggs and mix until smooth.
- Pour the batter into a lined baking pan and bake for 25 minutes.
- Let it cool completely.
- In a saucepan, heat the heavy cream until it simmers.
- Add chopped dark chocolate and stir until melted.
- Soak gelatin in water for 5 minutes, then add to the chocolate mixture.
- In a mold, layer the cooled cake, then pour in the chocolate mixture.
- Refrigerate for at least 4 hours to set.
- Top with raspberry puree and fresh raspberries before serving.
Notes
- Ensure the cake is completely cooled before adding the chocolate layer.
- You can use other fruit purees for different flavors.
- This dessert can be made a day in advance.
