Description

A festive layered dessert perfect for Christmas celebrations.


Ingredients

  • 2 cups of almond flour
  • 1 cup of granulated sugar
  • 4 large eggs
  • 1/2 cup of unsweetened cocoa powder
  • 1 cup of heavy cream
  • 1/2 cup of dark chocolate, chopped
  • 1 cup of raspberry puree
  • 1 tablespoon of gelatin
  • 1/4 cup of water
  • Fresh raspberries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond flour, sugar, and cocoa powder.
  3. Add eggs and mix until smooth.
  4. Pour the batter into a lined baking pan and bake for 25 minutes.
  5. Let it cool completely.
  6. In a saucepan, heat the heavy cream until it simmers.
  7. Add chopped dark chocolate and stir until melted.
  8. Soak gelatin in water for 5 minutes, then add to the chocolate mixture.
  9. In a mold, layer the cooled cake, then pour in the chocolate mixture.
  10. Refrigerate for at least 4 hours to set.
  11. Top with raspberry puree and fresh raspberries before serving.

Notes

  • Ensure the cake is completely cooled before adding the chocolate layer.
  • You can use other fruit purees for different flavors.
  • This dessert can be made a day in advance.
