Ingredients

  • 1 whole duck (about 56 pounds)
  • 2 oranges, quartered
  • 1 onion, quartered
  • 4 cloves garlic, crushed
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • Fresh herbs (thyme, rosemary)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Remove the giblets from the duck and pat it dry.
  3. Season the duck inside and out with salt and pepper.
  4. Stuff the cavity with oranges, onion, garlic, and herbs.
  5. Place the duck on a roasting rack in a roasting pan.
  6. Mix honey and soy sauce, then brush it over the duck.
  7. Roast for 1.5 to 2 hours, basting every 30 minutes.
  8. Check that the internal temperature reaches 165°F (74°C).
  9. Let the duck rest for 15 minutes before carving.
