A festive roasted duck recipe perfect for Christmas dinner.
Ingredients

- 1 whole duck (about 5–6 pounds)
- 2 oranges, quartered
- 1 onion, quartered
- 4 cloves garlic, crushed
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 tablespoons honey
- 2 tablespoons soy sauce
- Fresh herbs (thyme, rosemary)
Instructions
- Preheat your oven to 350°F (175°C).
- Remove the giblets from the duck and pat it dry.
- Season the duck inside and out with salt and pepper.
- Stuff the cavity with oranges, onion, garlic, and herbs.
- Place the duck on a roasting rack in a roasting pan.
- Mix honey and soy sauce, then brush it over the duck.
- Roast for 1.5 to 2 hours, basting every 30 minutes.
- Check that the internal temperature reaches 165°F (74°C).
- Let the duck rest for 15 minutes before carving.
Notes
- Use a meat thermometer for accuracy.
- Serve with roasted vegetables and cranberry sauce.
- Leftovers can be used in salads or sandwiches.
