Ingredients

- 2 cups of green beans
- 1 cup of baby carrots
- 4 medium potatoes
- 1 cup of heavy cream
- 1/2 cup of grated Parmesan cheese
- 1 tablespoon of olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Wash and chop the green beans and baby carrots.
- Peel and dice the potatoes.
- Boil the potatoes until tender, about 15 minutes.
- In a pan, heat olive oil and sauté green beans and carrots for 5 minutes.
- In a bowl, mix boiled potatoes with heavy cream and Parmesan cheese.
- Season with salt and pepper.
- Spread the potato mixture in a baking dish and layer the sautéed vegetables on top.
- Bake for 20 minutes or until golden brown.

- Can substitute cheese for a dairy-free option.
