Ingredients

  • 2 cups of green beans
  • 1 cup of baby carrots
  • 4 medium potatoes
  • 1 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • 1 tablespoon of olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Wash and chop the green beans and baby carrots.
  3. Peel and dice the potatoes.
  4. Boil the potatoes until tender, about 15 minutes.
  5. In a pan, heat olive oil and sauté green beans and carrots for 5 minutes.
  6. In a bowl, mix boiled potatoes with heavy cream and Parmesan cheese.
  7. Season with salt and pepper.
  8. Spread the potato mixture in a baking dish and layer the sautéed vegetables on top.
  9. Bake for 20 minutes or until golden brown.
