Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and line a 15×10 inch jelly roll pan with parchment paper.
  3. In a bowl, beat eggs and sugar until fluffy.
  4. Add flour, baking powder, and salt. Mix until smooth.
  5. Pour batter into the prepared pan and spread evenly.
  6. Bake for 12-15 minutes or until golden.
  7. Remove from the oven and let cool slightly.
  8. Turn the cake onto a clean kitchen towel dusted with powdered sugar.
  9. Roll the cake up in the towel and let it cool completely.
  10. Whip heavy cream with powdered sugar and peppermint extract until stiff peaks form.
  11. Unroll the cooled cake and spread the whipped cream evenly.
  12. Re-roll the cake and place seam-side down on a serving platter.
  13. Decorate with sprinkles and serve.
