Chocolate thumbprint cookies are soft and chewy cookies filled with rich chocolate ganache.
Ingredients

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chocolate chips, for filling
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together butter, granulated sugar, and brown sugar.
- Add eggs and vanilla extract, mixing well.
- In another bowl, whisk together flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Roll dough into balls and place on a baking sheet.
- Make an indentation in the center of each ball using your thumb.
- Bake for 10-12 minutes.
- Remove from oven and fill each indentation with chocolate chips.
- Let cool before serving.
Notes
- Store cookies in an airtight container.
- Use different types of chocolate for the filling if desired.
- Chill the dough for easier handling.
