Ingredients

  • 100g unsalted butter
  • 4 large eggs
  • 100g sugar
  • 200ml heavy cream
  • 150g fresh raspberries
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Melt the chocolate and butter together in a bowl over simmering water.
  3. In a separate bowl, whisk eggs and sugar until pale and fluffy.
  4. Fold the melted chocolate mixture into the egg mixture.
  5. In another bowl, whip the cream until soft peaks form.
  6. Gently fold the whipped cream into the chocolate mixture.
  7. Add the raspberries and vanilla extract. Mix carefully.
  8. Pour the batter into a lined cake pan.
  9. Bake for 25 minutes. Let it cool.
  10. Serve chilled, garnished with more raspberries if desired.
