- 1 cup chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup creamy peanut butter
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/2 cup whipped cream
- Chocolate chips for garnish
Instructions
- Preheat the oven to 325°F (160°C).
- Mix cookie crumbs and melted butter in a bowl.
- Press the mixture into the bottom of mini cheesecake cups.
- In another bowl, beat cream cheese until smooth.
- Add peanut butter, powdered sugar, and vanilla; mix well.
- Fold in whipped cream until combined.
- Spoon the mixture over the crusts in the cups.
- Bake for 15-20 minutes until set.
- Cool in the refrigerator for at least 2 hours.
- Garnish with chocolate chips before serving.
Notes
- Use gluten-free cookies for a gluten-free option.
- Store leftovers in the refrigerator for up to 5 days.
- Can be topped with crushed peanuts for extra texture.
