Ingredients
- Dark chocolate: 200 grams (about 7 oz)
- Unsalted butter: 100 grams (about 3.5 oz)
- Granulated sugar: 150 grams (about 3/4 cup)
- Eggs: 2 large eggs and 2 egg yolks
- All-purpose flour: 50 grams (about 1/3 cup)
- Vanilla extract: 1 teaspoon
- Salt: A pinch
- Optional: Espresso powder, flavored extracts, chocolate chips, nuts, fresh fruit
Instructions
- Preheat your oven to 220°C (425°F).
- Grease four ramekins with unsalted butter and dust with cocoa powder.
- Melt 200 grams of dark chocolate and 100 grams of unsalted butter in a heatproof bowl over simmering water.
- In a separate bowl, whisk together 150 grams of granulated sugar, 2 large eggs, and 2 egg yolks until pale and thickened.
- Pour the melted chocolate mixture into the egg mixture, add 1 teaspoon of vanilla extract and a pinch of salt, then fold in 50 grams of all-purpose flour.
- Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- Bake for 12-14 minutes until the edges are firm and the center is soft and slightly jiggly.
- Let cool for 1 minute, then run a knife around the edges and invert onto a plate to serve.

- Be careful not to overbake the cakes to maintain the gooey center.
