- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 4 eggs
- 1 cup sour cream
- 1/2 cup fresh strawberries, pureed
- 8 oz semi-sweet chocolate, melted
- Fresh strawberries for topping
Instructions
- Preheat oven to 325°F (160°C).
- Mix graham cracker crumbs, sugar, and melted butter in a bowl.
- Press the mixture into the bottom of a springform pan.
- Beat cream cheese, sugar, and vanilla in a mixer until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in sour cream and strawberry puree.
- Pour the cheesecake filling over the crust.
- Bake for 50-60 minutes or until set.
- Let it cool, then refrigerate for at least 4 hours.
- Dip fresh strawberries in melted chocolate and place on top of the cheesecake before serving.
