Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 cup dark chocolate, chopped
  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar for topping

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan, heat the cream, milk, and chopped chocolate over medium heat until melted.
  3. In a bowl, whisk the egg yolks and granulated sugar until light.
  4. Gradually add the chocolate mixture to the egg yolks, stirring constantly.
  5. Add vanilla extract and mix well.
  6. Pour the mixture into ramekins.
  7. Place ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
  8. Bake for 30-35 minutes, until set but still jiggly.
  9. Remove from the oven and cool to room temperature.
  10. Refrigerate for at least 2 hours.
  11. Before serving, sprinkle brown sugar on top and caramelize with a kitchen torch.

  • For a deeper flavor, use high-quality dark chocolate.
  • Make sure to cool the ramekins completely before refrigerating.
