A rich and creamy chocolate dessert with a crispy caramelized top.
Ingredients

- 2 cups heavy cream
- 1 cup whole milk
- 1 cup dark chocolate, chopped
- 5 large egg yolks
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup brown sugar for topping
Instructions
- Preheat your oven to 325°F (160°C).
- In a saucepan, heat the cream, milk, and chopped chocolate over medium heat until melted.
- In a bowl, whisk the egg yolks and granulated sugar until light.
- Gradually add the chocolate mixture to the egg yolks, stirring constantly.
- Add vanilla extract and mix well.
- Pour the mixture into ramekins.
- Place ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
- Bake for 30-35 minutes, until set but still jiggly.
- Remove from the oven and cool to room temperature.
- Refrigerate for at least 2 hours.
- Before serving, sprinkle brown sugar on top and caramelize with a kitchen torch.
Notes
- For a deeper flavor, use high-quality dark chocolate.
- Make sure to cool the ramekins completely before refrigerating.
- Use a torch for even caramelization.
