Ingredients

  • 1/2 cup sugar
  • 1/2 cup unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh strawberries
  • 1 cup chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together butter and sugar.
  3. Add eggs and vanilla; mix well.
  4. In another bowl, whisk flour, baking powder, and salt.
  5. Combine dry ingredients with wet ingredients.
  6. Pour batter into a greased mini cake pan.
  7. Bake for 15-20 minutes or until a toothpick comes out clean.
  8. Cool the cakes completely.
  9. Melt chocolate chips with vegetable oil.
  10. Dip strawberries in melted chocolate and place on top of each mini cake.
