- 1/4 cup coconut cream
- 1 teaspoon vanilla extract
Instructions
- Melt the dark chocolate chips in a microwave-safe bowl.
- Stir in the coconut cream and vanilla extract until smooth.
- Add the chopped dried cherries and shredded coconut to the mixture.
- Chill the mixture in the refrigerator for 30 minutes.
- Once chilled, scoop out small portions and roll them into balls.
- Roll the truffles in additional shredded coconut if desired.
- Place on a baking sheet and refrigerate until firm.
